About this cut

Rump roast is one of the more inexpensive cuts of beef packed full of zinc, iron, and protein -- definitely a great bang for your buck! It comes from, you guessed it, the back portion of the cow -- as far back as you can go before reaching the tail. If left whole it averages about 15 pounds, but rump roasts are usually cut into smaller roasts weighing 3-4 pounds each. Rump roast comes from a muscle that gets a lot of exercise so it will be tough unless cooked properly which is long and slow. Because this muscle gets a lot of exercise, it also is very lean, ensuring a heart-healthy, high protein eating experience for you! Fun fact -- rump roast makes great jerky if you have a dehydrator! Because it is so lean, less fat means less prep time for the jerky itself. It's also very full of natural flavor.
